My Cooking Escapades - Part 6

It’s been a long time since my last venture into the kitchen. I thought I wouldn’t have to do it at least for another couple weeks. After the last fiasco in the kitchen trying to make tofu Manchurian, I was under the impression that my mum was never going to let me into the kitchen again :D

But here I am, sitting at my aunt’s place in Coimbatore all set to record my next entry in my personal cook book (if I may call it that) As luck would have it, my aunt and mum were away shopping and left the lunch menu to me. Thank God they at least told me what to cook. But what was shocking was that they made me cook one of the most difficult dishes a novice could try – Vegetable Biryani.

But bless their souls for telling me the things I would need and the procedure I needed to follow to prepare the dish. So here goes my next entry (which I doubt u will try out if you’ve already tried out my previous recipes :P)

List of things needed (for a group of 4)

1.  Finely chopped assorted vegetables (Cauliflower, Beans, Carrot, Onion,      Tomato).  U can add any other vegetable u like
2.  Green chilies – finely chopped
3.  Ginger
4.  Smashed Garlic Pieces – 4
5.  250gm rice – boiled and drained
6.  Rice Stocking – 4 medium size cups
7.  Chili Powder – 1 teaspoon
8.  Turmeric Powder - 1 teaspoon
9.  Salt – As required
10.Biryani Masala – 1 teaspoon

Preparation

  1. Take some oil in a pan and fry the garlic, ginger and onion till the mixture turns golden brown.
  2. Now, add the Green chilies, assorted vegetables and a cup of the stocking and let the mixture boil for 5 min.
  3. Add the rice, remaining stocking, salt, chili powder, and turmeric powder and biryani masala to the boiling mixture
  4. Transfer the contents to an electric cooker close the lid. Let it cook till it’s done.

It sounds easy but takes a lot of time (especially the vegetable cutting part  - that alone took me close to 30 min :D) Quite contrary to popular expectation and belief, the food did turn out good! You should try it out too:) Happy eating!

Cheers,
Karthik Venkatachalapathi
